It is a concentrated product of cane juice and often date or palm sap without separation of the molasses and crystals, and can vary from golden brown to dark brown in colour. It is manufactured from sugar cane. While round jaggery is useful in Indian Cooking, it is also an ancient part of Ayurvedic Medicine and has spiritual significance in India. In Indian Cooking, Jaggery can sweeten some of the savory dishes. Shopping for this sugar may be eaten in small slices alone as a dessert, or it may be combined with spices to make a variety of Indian desserts and candies.
